Homemade Worcestershire Sauce

I love Worcestershire Sauce and I found this recipe a few years ago.. Once you've made your own store bought is never good enough again.



Worcestershire Sauce

1litre malt vinegar
1 cup treacle
100 grams garlic
4 centimetre piece root ginger
1 teaspoon whole cloves
1 teaspoon whole peppercorns
1 teaspoon whole allspice
3 teaspoons salt
1 teaspoon cayenne pepper

Put vinegar and treacle in a saucepan. Tie crushed garlic, crushed ginger, cloves, peppercorns and allspice in muslin and add to pan. Mix in salt and cayenne pepper.
Bring to boil and simmer 1 hour.
Bottle and seal.
Makes about 750millilitres.
store 2 weeks before use. Longer storage matures the flavour.
